I love gardening, but I don't have a lot of space or a desire to weed so this is what my garden looks like thus far...



The first picture was a volunteer pumpkin plant (I think) and it is taking over my yard and my neighbors yard!
We have picked lots of baby tomatoes and 4 zucchini. YUM. We also have one large tomato getting red.

Nice. Your garden looks great. It's amazing how large some of the vines and bushes can get. Our zucchini plants and cucumbers are in the process of taking over the garden. They're starting to grow over our root plants that aren't doing so hot. I wish our tomatoes would pick up. I also need to plant some herbs.
We've had tons on sugar snap peas, a couple green beans, 4 green bell peppers, a yellow squash, one radish, and a zucchini.
Well, today I picked our second zucchini. On Saturday it was a little small. I didn't check it yesterday. And today I went to look at it and it was gigantic!! It was the largest zucchini I've ever seen!
So I think I'll either do batter fried zucchini (a dish I haven't had in probably 10 years) or zucchini bread.
Fried zucchini so not worth the calories and grease. It tasted fine, but just not worth it. I'd much rather spend the calories on zucchini bread or go low cal on the egg zucchini mix. We only used half the zucchini and it was more than enough to feed the two of us. It was as big as my forearm!!!
I like to shread the zucchini into eggs and you have a nice easy meal. (that is if Matt will go for it).
I've done it before, but he feels it is a side dish and not a main dish.
